Expert perspectives: Major development trends of the Food Technology industry in the world

(VLU03/9/2021) - On September 1, 2021, Van Lang Institute of Science, Technology & Applications organized an online seminar "Food Technology and major development trends in the world". With the participation of 02 guests, Assoc. Prof. Dr. Phan Phuoc Hien - Director of the Institute of Applied Science and Technology, Van Lang University and Dr. Nguyen Quoc Cuong - Ho Chi Minh City University of Science and Technology, the workshop provided an overview of the context and potential of the industry before the pandemic as well as in the coming period.

The global outbreak of the Coronavirus disease (COVID-19) has seriously affected health and lives, disrupted activities in the food and industry worldwide. Health protection by strengthening resistance is one of the important solutions to prevent the risk of infection besides measures such as wearing a mask, washing hands frequently with soap or antiseptic water. It can be said that nutrition is the key to strengthen the resistance and the improvement of human dietary needs has opened up a series of opportunities for the field of Food Technology.

Opening the seminar, Assoc. Prof. Dr. Phan Phuoc Hien, Director of the Institute of Science, Technology and Applications, Van Lang University affirmed the importance of the relationship between food and life, especially in the current epidemic situation. Besides the ingredients, the associate professor also mentioned that the profession must be very careful when analyzing the factors that determine the taste, flavor and texture, and determining the ingredients of the food. Assoc. Prof. Dr. Phan Phuoc Hien emphasized the creative and scientific efforts of the Institute of Science, Technology and Applications of Van Lang University when successfully transferring technology of many products to the market.

In the report at the conference with the topic "Food technology, future general trends and Sensory evaluation", Dr. Nguyen Quoc Cuong (Ho Chi Minh City University of Science and Technology), specializing in the field of Food Technology and Sensory-Consumer Science said: “The dominant sensory evaluations are especially important right from the research stages to commercialization of products”. With rich data sources and diverse approaches, Dr. Nguyen Quoc Cuong helped attendees have an overview of new methods applied in sensory assessment and consumer tastes, especially sensory perception over time corresponding to different stages of the consumer's life and the process of chewing and swallowing food products; Correlation between sensory and non-sensory product factors, and their influence on consumer expectations (preference, satiety, food intake); The model evaluates the influence of consumer characteristics and product attributes on consumer expectations; Consumer grouping method. In addition, Dr. Nguyen Quoc Cuong also raised the world's leading food technology trends, removing the concept that "Technical students can only work as workers".
